PRUNE BARS - CARRÉS AUX QUETSCHES
Nature, in August, is particularly plentiful and offers so many wonderful goodies. For a foodie like me who loves seasonal produces, this period of the year is paradisiac and highly exciting!When the stalls of (food)markets abund with all those precious greengroceries, I cannot moderate my vegetable and fruit consumption and tend to compulsively buy everything (well not exactly) that makes me salivate.
It is a fact that every time I go shopping, I come back home with tons of fresh and local produces from the Geneva area. My fridge literally explodes and cannot even "swallow" the tiniest cherry tomato anymore...
During this plentiful period, One of my alltime favorite stone fruit is fresh Swiss prunes (also known as "Quetsches" in France and "Zwetschge" in Swiss Germany/Germany). Those lovely violet little plums are so pretty, addictive, delicate-tasting and versatile (tarts, pies, compote, crumbles, ice creams, savory dishes, etc...) that I can never get enough of them.
The people who know me well and read this blog regularly must have noticed that dessert bars rule my world and that I will never tire of them (the same goes for prunes). So, It was very naturally that I decided upon baking that treat and using prune "jam" as a filling, thus combinung two of my favorite things.
After having searched the net for slices recipes which would enlist prunes as an ingredient, I came to the conclusion that I wasn't going to find any recipe of that kind and that I would have to invent one for the occasion...
So, I opted for a zesty and slightly smoky lemon-scented crust with cocoa nibs (that were given to me by the kind and generous Mamina, a French foodblogger at "Et Si C'était Bon?" - merci beaucoup!!!), a tangy and fragrantly spicy 5 spice prune filling and a coconutty and almondy crumble topping.
As you can imagine, those "Prune Bars" were fantastic and so enjoyable with their layers of refined flavors that blend equisitely together.
Recipe by Rosa @ Rosa's Yummy Yums 2009.
Makes about 16 bars.
Ingredients for the "Prune Filling":
2 Cups (~ 250g) Fresh prunes/plums, cut in cubes
2 Tbs (30g) Castor sugar
2 Tbs (30g/ml) Lime juice
1/2 Tsp (2.5g) Five spice powder
1 Tsp (5g) Cornstarch
Ingredients for the "Crust":
1 1/4 Cups (160g) Plain white flour
1/3 Cup (70g) Castor sugar
1/2 Tsp (2.5g) Sea salt
1/2 Cup (120g) Unsalted butter, cut into small cubes
The zest of 1/2 organic lemon, finely grated
1/2 Tsp (2.5g) Vanilla extract
2-3 Tsps (10-15g) Cocoa nibs (optional)
Ingredients for the "Crumb Topping":
4 Tbs of the Crust mixture
1/4 Cup (22g) Almond sliced
1/3 Cup (30g) Sweetened coconut
Method for the "Plum Filling:1. In a non-reactive saucepan, sprinkle the sugar and spice over the plums and let the fruit macerate for about 20 - 30 minutes.
2. Add the lime juice and cook the plums until the liquid has evaporated and the fruit is thick and chunky. You can mash some of them if you prefer.
3. Let cool and then incorporate the cornstarch.
Method for the "Crust":
4. Position a rack in the center of the oven and preheat the oven to 180° C (350° F).
5. Grease the bottom and sides of a 13 x 13cm (9 by 9-inch) baking pan.
6. In a small bowl, stir together the flour and salt. Set aside.
7. In the bowl of an electric mixer, using the paddle attachment, beat the butter, vanilla, lemon and sugar at medium speed until combined, about 1 minute.
8. At low speed, add the flour mixture and mix just until crumbly.
9. Set aside 4 tbs of this mixture for the crumb topping.
10. Mix 2 tsps cocoa nibs to the rest of the dough and turn out into the prepared pan.
11. With floured fingertips, press the dough evenly into the bottom of the pan.
12. Using a spatula or the back of the spoon, spread the plum filling evenly over the dough.
Method for the "Crumb Topping":
13. Mix all ingredients for the crumb topping and spread evenly over the prune jam.
14. Bake on the middle of the oven, until golden brown 30 to 40 minutes.
15. Cool the bars completely before cutting them into squares or rectangles.
Remarks:You can replace the castor sugar by brown (light or dark) sugar.
If you have no prunes at hand, try this recipe with plums, peaches, nectarines, apricots or evn bananas.
Those bars can be stored in an airtight container in the refrigerator for up to 3 days.
Serving suggestions:
Serve those bars with whipped cream, clotted cream, mascarpone, ice cream or just a glass of ice cold milk.

Ingrédients pour la "Garniture Aux Quetsches":
2 Tasses (~ 250g) de Quetsches/pruneaux, coupés en morceaux
2 CS (30g) de Sucre cristallisé
2 CS (30g/ml) de Jus de lime
1/2 CC (2.5g) de 5 épices
1 CC (15g) de Maizena
Ingrédients pour la "Croûte":
1 1/4 Tasses (160g) de Farine blanche
1/3 de Tasse (70g) de Sucre cristallisé
1/2 CC (2.5g) de Sel de mer
120g de Beurre non-salé, coupé en petits cubes
Le zeste d'un 1/2 citron bio, finement rapé
1/2 CC 82.5g) d'Extrait de vanille pure
2-3 CC (10-15g) d'Eclats de cacao (en option)
Ingrédients pour le "Streusel":
4 CS du Mélange pour la croûte
1/4 de Tasse (22g) d'Amandes éffilées
1/3 de Tasses (30g) de Noix de coco rapée, sucrée
Méthode pour la "Garniture Aux Quetsches":1. Dans une casserole, mélanger le sucre et les épices avec les quetsches en cubes, puis laisser macérer pendant 20 à 30 minutes.
2. Ajouter le jus de lime et cuire jusqu'à ce que le liquide se soit évaporé, que la garniture soit épaisse et que les fruits aient "fondu".
3. Laisser refroidir puis incorporer la maizena.
Méthode pour la "Croûte":
4. Préchauffer le four à 180° C et positionner la grille au milieu du four.
2. Beurrer un moule à Brownies de 13 x 13cm.
3. Dans un petit bol, mélanger la farine avec le sel et mettre de côté.
4. Mettre le beurre, la vanille, le zeste et le sucre dans le bol d'un mixer afin que le mélange blanchisse, environ 1 minute.
5. Ajouter le mélange farine/sel et pulser suffisamment afin que le mélange soit sabloneux et grossier.
6. Mettre de côté 4 CS de ce mélange (pour le "streusel").
7. Mélanger 2 CC d'éclats de cacao avec le reste du mélange pour la croûte, puis étaler dans le moule.
8. Avec vos doigts (enfarinés) presser le mélange afin d'obtenir une croûte lisse et uniforme.
9. A l'aide d'une spatule, étaler la garniture aux quetsches sur la croûte.
Méthode pour le "Streusel":
10. Mélanger tous les ingrédients pour le streusel et saupoudrer le dessus des carrés avec.
11. Cuire pendant 30 à 40 minutes, jusqu'à ce que le dessus des carrés soit doré.
12. Laisser refroidir sur une grille et couper en carrés seulement une fois que les barres sont complétement refroidies.
Remarques:
Vous pouvez remplacer le sucre cristallisé par du sucre brun (clair ou foncé).
Si vous n'avez pas de quetsches à la maison, vous pouvez faire ces carrés avec des prunes, pêches, nectarines, abricots ou même des bananes.
Ces carrés peuvent être conservés au frigo pendant environ 3 jours.
Idées de présentation:Servir ces carrés avec de la crème fouettée, de la "clotted cream", du mascarpone, de la glace ou simplement avec un verre de lait très froid.

BLACKBERRY PIE BARS
Since quite a while, I've been systematically coming across a "The Pastry Queen" recipe for "Blackberry Pie Bars" on many of the blogs I visit and, as I'm a immense (black)berry lover as well as a big bar fanatic, I could not resist the temptation of baking them myself..."The Pastry Queen" is a Texas treat, best-selling cookbook that has cought my attention since the day it was released. Unfortunately, until now, I had never tested one of their recipes and always had doubts about wether or not I should buy this book. Well, I must say that after having made those fantastic bars, there is no need to convince me to add "The Pastry Queen" to my long list of cookbooks which should sit in my cookery bookshelf!
First of all, it must be said that those bar cookies have a name which brings confusion. I personally don't find that those "Blackberry Pie Bars" have anything in common with pies nor do they ressemble one for the following reasons:
1. The crust is shortbready and very different from flaky pastry
2. The filling is dense and custardy in texture, just like clafoutis. Fruit pies generally have a straight forward and less copious filling consisting of berries/fruits, sugar, spices and a thickening agent.
Nonetheless, thos facts don't take anything away from those squares' unshakable appeal as they are totally sexy, terrifyingly luscious and incredibly flavorful. So the mistitling isn't all that important at the end. We are not going to dither any longer over the subject...
This summery goodness is irresistibly rich and pleasantly sweet, yet not sickly at all. The ambrosial flavors of blackberries (slightly biting and smoky), butter (round and nutty), lemon (refreshingly zesty) and sour cream (pleasurably tangy) blend well together, and the contrasting textures (smooth, creamy and crunchy) transform those bars into the most exquisite treat.Those "Blackberry Pie Bars" are terrific and will bring joy amongst your munchers (children and grownups alike) who will chomp on them greedily as they taste like heaven and are addictive like hell!
~ Blackberry Pie Bars ~Recipe adapted from "The Pastry Queen".
Makes about 24 bars.
Ingredients for the "Crust":
3 Cups (383g) All-purpose flour
1 1/2 Cups (315g) Castor sugar
1/4 Tsp Sea salt
1 1/2 Cups (3 sticks/360g) Chilled unsalted butter, cut into cubes
The zest of two lemons
Ingredients for the "Blackberry Filling":
4 Large eggs
2 Cups (420g) Castor sugar
1 Cup (240g) Sour cream
3/4 Cup (96g) All-purpose flour
1 Pinch Sea salt
16oz (480g) Frozen blackberries, defrosted and drained (see remarks)
Method for the "Crust":1. Preheat the oven to 180° C (350° F).
2. Grease a 9 x 13-inch backing pan with butter or cooking spray and set aside.
3. Zest two lemons.
4. Measure out the sugar onto a clean work surface. Rub the lemon zest into the sugar with a bench scraper or the back of a spoon.
5. Combine lemon sugar, flour, salt and butter in an electric mixer fit with a paddle attachment. Beat the ingredients on medium speed until the mixture looks dry and crumbly.
6. Reserve 1 1/2 cups of the crust mixture to use as the topping. Press the remaining mixture into the bottom of the pan.
7. Bake the crust for 12 to 15 minutes until it is golden brown.
8. Let cool for 10 minutes while you make the filling.
Method for the "Blackberry Filling":
9. Whisk the eggs in a medium bowl. Add the sugar, sour cream, flour and salt.
10. Gently fold in the blackberries.
11. Spoon the mixture evenly over the crust (You may have to distribute the blackberries evenly around).
12. Sprinkle the reserved crust mixture evenly over the filling.
13. Bake for 45 to 55 minutes until the top is lightly browned.
14. Cool on a wire rack for 1 hour before slicing.
Remarks:You can also use 3 cups of fresh blackberries, or 1 (16oz/480g) package frozen blackberries. If you’re using frozen berries, be sure to defrost and drain the excess liquid. Place the frozen berries on a plate in the refrigerator overnight.
Instead of using blackberries, why not try making this recipe with other berries such as blackberries, strawberries or raspberries (or a mix of all four berries).
Rubbing the zest into the sugar will release oils from the zest and create a lemon scented sugar.
As this recipe gives a huge amount of bars and we are only two at home, I decided to divide the quantities and bake those bars in a 23x23cm (9 x 9-inch) sheet pan. It worked perfectly and gave at least big 12 portions.
Keep those bars in the fridge (2 to 3 days max.).
Serving suggestions:
Serve those bars with either vanilla or lemon ice cream.

~ Carrés Aux Mûres ~Recette tirée et adaptée du livre "The Pastry Queen".
Pour environ 24 carrés.
Ingrédients pour la "Croûte":
3 Tasses (383g) de Farine blanche
1 1/2 Tasses (315g) de Sucre cristallisé
1/4 CC de Sel de mer
1 1/2 Tasses (360g) de Beurre non-salé, froid, coupé en cubes
Le zeste de 2 citrons
Ingrédients pour la "Garniture Aux Mûres":
4 Gros oeufs
2 Tasses (420g) de Sucre cristallisé
1 Tasse (240g) de Crème aigre/sure
3/4 de Tasse (96g) de Farine blanche
1 Pincée de Sel de mer
480g de Mûres congelées, dégelées et égouttées (voir remarques)
Méthode pour la "Croûte":1. Préchauffer le four à 180° C.
2. Graisser/beurrer une plaque de 23 x 33cm et la mettre de côté.
3. Zester les 2 citrons.
4. Dans un petit bol, bien frotter le zeste avec le sucre, jusqu'à ce qu'il devienne humide et parfumé.
5. Dans un mixer, mettre le sucre parfumé, la farine, le sel et le beurre, puis pulser afin d'obtenir un mélange sableux (tel un appareil à crumble).
6. Mettre de côté 1 1/2 tasse de ce mélange, puis mettre le reste du "crumble dans le moule et bien foncer (applatir) avec les doigts.
7. Cuire la croûte pendant 12 à 15 minutes, jusqu'à ce qu'elle soit dorée.
8. Laisser refroidir 10 minutes sur une grille. Pendant ce temps préparer la garniture.
Méthode pour la "garniture Aux Mûres":9. Battre les oeufs dans un bol moyen. Ajouter le sucre, la crème fraîche, la farine et le sel. bien mélanger.
10. Incorporer les mûres le plus délicatement possible.
11. Verser ce mélange sur la croûte et bien distribuer les mûres.
12. Saupoudrer de manière homogène avec le reste du "crumble".
13. Cuire pendant 45 à 55 minutes, jusqu'à ce que le dessus soit légèrement doré.
14. Laisser refroidir sur une grille et attendre au moins 1 heure avant de découper en tranches.
Remarques:Vous pouvez utiliser 3 tasses de mûres fraîches ou 480g de mûres congelées. Si vous utilisez des mûres congelées, faites-les dégeler (une nuit au frigo) et égoutter au préalable.
Au lieu d'utiliser des mûres, pourquoi ne pas utiliser des myrtilles, des fraises ou des framboises (un mélange des 4 serait aussi parfait).
En frottant les zestes avec le sucre, vous libérez les huiles essentielles qui parfumeront votre sucre.
Etant donné que cette recette donne des quantité gargantuesques, je vous conseille de la diviser en deux et d'utiliser un moule de 23 x 23cm.
Conserver ces carrés au frigo (2 à 3 jours max.).
Idées de présentattion:
Servez ces carrés avec de la glace à la vanille ou au citron.

APRICOT CRUMBLE-CRUMBLE AUX ABRICOTS
It has been quite hot lately, so I have not been very much into putting the oven on for a too long period of time or getting too busy in my sweltery and stuffy kitchen. Not forgetting that when it's a freakingly "tropical" summer day you don't really want to eat rich, hearty or steaming hot food...That's the reason why I opted for making an "Apricot Crumble" that doesn't demand much effort nor uses the oven for more than 30 minutes, thus not transforming me into a perspiring mass of melting flesh with a flushed face. There's no need to sweat like a pig while baking nor to get heat exhausted in order to eat something that'll make your tastebuds happy!
I have just realized that, as strange as it sounds, I had never posted any crumble (also known as "crisp" in America) recipe before, although it is something I prepare quite often and all year long, according to the fruits that are in season. Well, it was time for me to remediate to that situation since I've practically been brought up on that rustic and humble British dessert speciality (it's savory counterpart also exists) which is an excellent and less fussy alternative to pies.
As I happened to have some delicious apricots on stock (as long as they are in season, I buy kilos of them every week), I thought that they would bring a wonderfully acidulated and perfumed note to the overall round and buttery taste of crumble. The result was simply delightful!
~ Apricot Crumble ~Recipe by Rosa @ Rosa's Yummy Yums 2009.
For 4 medium/small individual dessert dishes.
Ingredients:
10-12 Fresh Apricots, sliced
200g All-purpose flour
20g Ground almond (optional)
100g Light brown sugar + 4x 1 Tbs (for the fruits)
1/2 Tsp Sea salt
100g Unsalted butter, cold and cut into pieces
Ground cinnamon, to taste
Method:1. Heat oven to 200° C (400° F) and butter the dishes.
2. Divide the fruits evenly, putting the same amount of cut apricots into the 4 dishes.
3. Sprinkle 1 Tbs light brown sugar (4x 1 tbs) and as much cinnamon as desired over the fruits.
4. In a medium bowl, mix all the dry ingredients together and rub the butter into this mixture until it resembles bread crumbs.
5. Divide this mixture in 4 and spread it evenly over the fruits in each dish.
6. Bake for about 30 minutes, or until the fruits are cooked and the top is golden brown.
7. Servir warm, at room temperature or cold.
Remarks:You can replace the ground almonds by any ground nuts of your choice or by grated coconut.
Instead of using light brown sugar, you can use castor sugar.
the ground cinnamon is optional. Use the spices of your choice.
Serving suggestions:
Serve with unsweetened condensed milk, whipped cream, ice cream or custard.
The sweet Cenwen from "La Cuisine Des Anges" (France) made my crumble and it looks delicious! Great!

Pour 4 moyennement petits plats à gratin/ramequins individuels.
Ingrédients:
10-12 Abricots, coupés en tranches
200g de Farine blanche/fleur
20g d'Amandes moulues (en option)
100g de Sucre brun clair + 4x 1 CS (pour les fruits)
1/2 CC de Sel de mer
100g de Beurre non-salé, froid et coupé en morceaux
Cannelle en poudre, selon goût
Méthode:1. Préchauffer le four à 200° C et beurrer les plats.
2. Mettre la même quantité de fruits dans les 4 plats.
3. Saupoudrer les fruits avec 1 CC de sucre brun clair (par plat) ainsi qu'avec la cannelle.
4. Dans un bol moyen, mélanger ensemble les ingrédients secs et le beurre coupé en morceaux, puis sabler du bout des doigts jusqu’à obtention d’une poudre sableuse.
5. Diviser ce mélange en 4 et le parsemer sur les fruits.
6. Cuire pendant 30 minutes, ou jusqu'à ce que les fruits soient cuits et que le crumble soit doré.
7. Servir chaud, à température ambiante ou froid.
Remarques:Vous pouvez remplacer la poudre d'amande par les noix moulues de votre choix ou par de la noix de coco rapée.
Le sucre brun clair peut être remplacé par du sucre crystallisé.
Utilisez les épices de votre choix au lieu de la cannelle en poudre.
Idée de présentation:
Servir avec du lait concentré non-sucré, de la crème fouettée, de la glace ou du custard.

BLUEBERRY CORDIAL
After having come back from an exhausting walk in the sizzling sun and suffocating heat, I was very thirsty and in need a refreshing drink...
I didn't want to have tea or water, so I decided to improvise a thirst-quenching drink that would both please my demanding palate and soothe my body's demand for cold liquid. That's how I came up with the idea of making a "Blueberry Cordial".
Actually, it looks like clotted blood, uuugghhh!!! Sorry folks, I din't mean to scare you... Where is my garlic?!!!
~ Blueberry Cordial ~
Recipe by Rosa @ Rosa's Yummy Yums 2009
Ingredients:
250g Frozen blueberries, not thawed
The zest of 1/2 an Organic lemon
The juice of 1 Organic lemon
Sugar, to taste (I used about 3-4 Tbs)
1/2 Litre or more water (sparkly or not), very cold
Method:
1. Put all the ingredients in the blender and mix until smooth. Strain (optional).
2. Check sweetness and thickness. Correct if necessary.
Remarks:
Try replacing the lemon zest and juice, by that of an orange.
You can strain the juice or not.
Serving suggestions:
Serve at any time of the day with ice cubes and a slice of lemon.
~ Drink Aux Myrtilles ~

Ingrédients:
250g de Myrtilles congelées, non-dégelées
Le zeste d'un 1/2 Citron bio
Le jus d'un Citron bio
Sucre, selon goût (j'ai utilisé 3-4 CS)
1/2 Litre ou plus d'Eau plate ou gazeuse, très froide
Méthode:
1. Mettre tous les ingrédients dans un blender et mixer jusqu'à obtention d'un jus sans morceaux et bien lisse. Passer au chinois (pas obligatoire).
2. Corriger la saveur et l'épaisseur en ajoutant plus de sucre ou d'eau.
Remarques:
Vous pouvez remplacer le jus et le zeste de citron par le jus et zeste d'une orange.
Vous pouvez passer le jus au chinois, mais ce n'est pas nécessaire.
Idées de présentation:
Servez ce jus à n'importe quelle heure de la journée, avec des glaçons et une tranche de citron.

CINNAMON APRICOT FLAN TART
It is one of my favorite fruit seasons as the the choice is vast and the possibilities are endless. But, generally, from May through October, I mainly bake loads of delicious tarts, invent and improvise a lot while in the kitchen!
I very rarely follow a recipe when I'm making a fruit tart and just let my imagination do the work. I am quite good at that...
The other day, I had a box of fragrant apricots from the South of France begging to get eaten, so I decided that I'd bake a speciality of the house which we very much love: "Cinnamon Apricot Flan Tart".
My luscious tart combines the slight and contrasting salty taste of the pastry as well as the natural acidity and the exhalirating aromas of the apricots to the soothing sweetness of the creamy and wonderfully cinnamon-flavored "Flan Filling". A perfect combination!
This "Cinnamon Apricot Flan Tart" is irresistible and extremely lip-smacking with it's gorgeously flaky "Shortcrust Pastry", tangy apricots, flan-like filling and generous sprinkle of cinnamon.

Makes one 22cm tart.
Ingredients for the "Shortcrust Pastry":
250g Plain white flour
110g Unsalted butter, very cold and cut into small cubes
25g Lard (see remarks), cut into small cubes
1 1/3 Tsp salt
1 Tbs Sugar
About 90-1000ml icy water or enough to bind the mixture
Ingredients for the "Apricot Filling":
500-530g Fresh apricots, pitted, halved and slit halfway through the middle
2 Tbs Cornstarch
2 + 2 Tbs Light brown sugar
1/2 Tsp Ground cinnamon
Ingredients for the "Flan Filling":
1.5 Big egg (~1 egg = 63g)
3/4 Cup Double cream (35% fat, see remarks)
3/8 Cup Light brown sugar
1 Tsp Vanilla extract (see remarks)
3/4 Tsp Ground cinnamon
1. Sift the flour and salt into a medium-sized bowl/bassin.
2. Add butter and the lard. Rub between the fingers until the mixture is flaky.
3. Pour in water, gradually, while continuously cutting and stirring with a knife (stop adding water when the dough is stiff/it should not be sticky or wet). Gather up into a soft ball.
4. Dust your working area and rolling pin with flour and shape the pastry by rolling away from you and always turning the pastry around in order to achieve a round shape.
5. Place it in the tart pan and trim the edges.
6. Prick the bottom with a fork.
Method for the "Apricot Filling":
7. Preheat the oven to 220° C (450° F).
8. Mix together the cornstarch and 2 Tbs light brown sugar.
9. Sprinkle over the pastry bottom.
10. Place the apricots in a neat way.
11. Sprinkle with the remaining 2 tbs light brown sugar and cinnamon.
12. Bake in preheated oven for 20-25 minutes, until the sides of the pastry are pale golden and the apricots are slightly cooked through.
13. Meanwhile, in a small bowl, whisk lightly the eggs, then add the cream, vanilla extract, ground cinnamon and light brown sugar. Mix well in order to get a homogenous mixture.
14. Pour the filling into the tart pan.
15. Bake for another 20-25 minutes at 200° C (400° F), until the filling is golden brown and completely set.
16. Remove from the oven and let cool on a wire rack.
Remarks:
Lard is solid pork fat. You can replace it by the oil of your choice or margarine which also make the crust nice and crispy/flaky.
You will have a little bit of pastry leftover. Use it as you wish.
Instead of double cream, try using single cream.
You can replace the cinnamon in this recipe by almond essence. In that case, leave out the cinnamon used for sprinkling and for the filling. Add 1/2 tsp almond essence to the "Flan Filling".
Vanilla paste works also very well. Use 1/2 tsp.
Be careful not to add too much water as the pastry should not be stick to the touch.
While mixing the water to the flour/butter mixture never work the pastry like a bread dough, otherwise you would end up with a stiff, hard and elastic pastry, because you would have liberated the gluten in the flour.
Serving suggestions:
This tart is delicious when eaten with either a scoop of homemade ice cream (vanilla, pistachio, caramel, walnut, etc..) or a dollop whipped cream.
You can also sprinkle some almond praline or drizzle some marple syrup as well as some lavender honey over it.

~ Tarte A La Crème, Cannelle et Aux Abricots ~

Ingrédients pour la "Pâte Brisée":
250g de Farine blanche/fleur
110g de Beurre non-salé, coupé en petit dés
25g de Saindoux (voir remarques), coupé en petits dés
1 1/3 CC de Sel
1 CS de Sucre cristallisé
Environ 60ml d'eau très froide ou assez afin que la pâte forme une boule
Ingrédients pour "l'Appareil Aux Abricots":
500-540g d'Abricots frais, coupés en deux, puis fondus par le milieu
2 CS de Maïzena
2 + 2 CS de Cassonade/sucre brun (clair)
1/2 CC de Cannelle en poudre
1.5 Gros oeuf (~63g)
3/4 Tasse de Crème double (35% de mat. grasses, voir remarques)
3/8 Tasse de Cassonade/sucre brun (clair)
1 CC d'Extrait de vanille (voir remarques)
3/4 CC de Cannelle en poudre
Méthode pour la "Pâte Brisée":
1. Tamiser la farine et le sel dans un bol moyen.
2. Ajouter le beurre et le saindoux. Frotter la farine et le beurre/saindoux entre les doigts afin d'obtenir un mélange qui ait la texture de la poudre d'amande.
3. Verser l'eau, graduellement, tout en mélangeant bien (n'ajoutez plus d'eau quand la pâte aura atteint la bonne consistance/ni trop mouillée, ni trop collante). Former une boule.
4. Fariner votre rouleau à pâtisserie et votre plan de travail. Etalez la pâte avec un rouleau à pâtisserie (du milieu jusqu'à l'extérieur) afin d'obtenir une forme ronde.
5. Posez la pâte sur votre moule et découpez l'excédent de pâte.
6. Piquez la pâte avec une fourchette.
7. Préchauffer le four à 220° C (450° F).
8. Mélanger ensemble la maïzena et 2 CS de cassonade.
9. Saupoudrer le fond avec ce mélange.
10. Placer les abricots joliment.
11. Saupoudrer avec les 2 CS de cassonade restante et avec la cannelle.
12. Cuire dans le four préchauffé pendant environ 20-25 minutes, ou jusqu'à ce que les rebords de la pâte soient légèrement dorés et que les abricots soient juste cuits à point.
Méthode pour "l'Appareil A La Crème":
13. Pendant ce temps, battre légèrement l'oeuf en omelette, ajouter la crème, l'extrait de vanille, la cannelle et la cassonade. Bien mélanger afin d'obtenir un appareil homogène.
14. Verser dans le moule, en faisant un sorte de recouvrir les abricots.
15. Cuire pendant environ 20-25 minutes supplémentaires à 200° C (400° F) ou jusqu'à ce que l'appareil soit ferme et doré.
16. Retirer du four et laisser refroidir sur une grille.
Le saindoux est de la graisse de porc (solidifiée). Vous pouvez le remplacer par de l'huile ou de la margarine qui rendent aussi la pâte croustillante.
Vous obtiendrez un reste/surplus de pâte. A vous de l'utiliser à votre guise.
Au lieu d'utiliser de la crème double, essayer de prendre de la crème allégée (moins de 35% de mat. grasses).
La cannelle peut être remplacée par de l'essence d'amande. Dans ce cas, n'utilisez pas du tout de cannelle et ajoutez 1/2 de CC d'essence d'amande à "l'Appareil A La Crème" .
La pâte de vanille convient aussi très bien. Utilisez 1/2 CC.
Soulevez toujours la farine lorsque vous la frottez avec le beurre/saindoux: ça apporte de l'air au mélange.
Faites bien attention de ne pas ajouter trop d'eau à votre pâte. Elle ne doit pas être collante.
Pendant que vous mélangez l'eau au mélange farine/beurre/saindoux, ne la travaillez pas telle une pâte à pain, autrement votre pâte sera dure, élastique et pas manipulable du tout car vous aurez libéré le gluten contenu dans la farine.
Cette tarte est délicieuse lorsque qu'elle est accompagnée d'une boule de glace maison (vanille, pistache, caramel, noix de Grenoble, etc..) ou de crème chantilly.
Vous pouvez aussi la saupoudrer de pralin aux amandes ou l'arroser avec du sirop d'érable ainsi qu'avec du miel à la lavande.
