Autumn is a wonderful season on all levels. Culinarily speaking, it is harvest time and the stalls are full with gorgeous vegetables and fruits. Nature is colorful and so are our plates too...
On Halloween morning (Saturday the 31st of October), I still had not yet prepared anything in order to celebrate this special day, so I thought that I'd better get busy in the kitchen and come up with something to mark the event.
As I usually do when I'm looking for ideas, I went online and googled my way through the net. I was looking for an easy recipe that would both be scrumptious and not too fussy to make (time was limited). That's how I stumbled upon a "Pumpkin Cupcakes" recipe that would give me the opportunity to use the pumpkin puree and the tons of cream cheese I had on stock in my fridge.
I could not have chosen a more delightful recipe. Those "Pumpkin Cupcakes" turned out wonderfully spicy, lusciously moist as well as light and so pretty with their delightfully fluffy frosting. The pumpkin pie flavors of the cakes blended so well with the orangy, sweet and slightly tangy taste of the cream cheese frosting.
Heavenly like a kiss and regressively irresistible like playful innocence!
~ Pumpkin Cupcakes With Cream Cheese Frosting ~ Recipe by Gastronomer at "Gas-tron-o-my" (USA) and adapted by Rosa @ Rosa's Yummy Yums.
Makes 22 cupcakes and about 2 cups of frosting.
Ingredients for the cupcakes: 2 Cups (255g) All-purpose flour 1 Tsp baking soda 1 Tsp Baking powder 1 Tsp Sea salt 1 Tsp Ground cinnamon 1 Tsp Ground ginger 1/4 Tsp Freshly grated nutmeg 1/4 tsp Ground allspice 1 Cup (240g) Packed light-brown sugar 1 Cup ( 210g) Granulated sugar 1/2 Cup (120g) Unsalted butter, at room temperature 1/2 Cup (105g) Vegetable oil 4 Large eggs, lightly beaten 1 can (15 oz/450g) Pumpkin puree Ingredients for the frosting: 8 Ounces (240g) Cream cheese, at room temperature 8 Tbs (1 stick/120g) Unsalted butter, cut into pieces, room temperature 1 Cup (120g) Confectioners’ sugar 1 Tsp Pure vanilla extract 1/2 Tsp pure orange extract Method for the cupcakes: 1. Preheat oven to 180° C (350° F). 2. Line cupcake pans with paper liners; set aside. 3. In a medium bowl, whisk together flour, baking soda, baking powder, salt, cinnamon, ginger, nutmeg, and allspice; set aside. 4. In a large bowl, whisk together, brown sugar, granulated sugar, butter, oil and eggs. Add dry ingredients, and whisk until smooth. 5. Whisk in pumpkin puree. 6. Divide batter evenly among liners, filling each about 2/3 of the way. 7. Bake until tops spring back when touched, and a cake tester inserted in the center comes out clean, 20 to 25 minutes, rotating pans once if needed. 8. Transfer to a wire rack; let cool completely.
Method for the frosting: 9. Place cream cheese in a medium mixing bowl. Using a rubber spatula, soften cream cheese. 10. Gradually add butter, and continue beating until smooth and well blended. 11. Sift in confectioners’ sugar, and continue beating until smooth. 13. Add vanilla and orange extract, and stir to combine. 14. Top the cupcakes with the frosting and decorate as desired.
Remarks: I recommend you to use the following pumpkin:Potimarron (French) = Hokkaido Pumpkin = Chestnut Pumpkin = Baby Red Hubbard = Uchiki Kuri = Chinese Pumpkin = Japanese Pumpkin = Sugar Pumpkin. You can also make this pudding with Butternut squash, but it will be less tasty. To obtain fresh puree, take your pumpkin, cut it in half, deseed it and peel it, then cut it in cubes and steam. Once it is cooked, mash the pumpkin flesh. It has to be a very smooth and thick (not to wet) puree.
Serving suggestions: Serve those cupcakes for afternoon tea with a hot drink of your choice (tea, coffee, caffè latte, hot milk, etc...).

~ Cupcakes Au potimarron, Glaçage Au cream Cheese ~ Recette par Gastronomer de "Gas-tron-o-my" (USA) et adaptée par Rosa @ Rosa's Yummy Yums.
Pour 22 cupcakes.
Ingrédients pour les cupcakes: 255g de Farine blanche 1 CC de Bicabonate de soude 1 CC de poudre à lever/cake 1 CC de Sel de mer 1 CC de Cannelle en poudre 1 CC de Gingembre en poudre 1/4 de CC de Noix de muscade en poudre 1/4 CC de Tout-épice en poudre 240g de Sucre brun clair 210g de Sucre cristallisé 120g de Beurre non-salé, à température ambiante 105g d'Huile d'arachide 4 Gros oeufs, à température ambiante 450g de Purée de potimarron Ingrédients pour le glaçage: 240g de Cream cheese, à température ambiante 120g de Beurre non-salé, à température ambiante 120g de Sucre en poudre 1 CC d'Extrait de vanille pure 1/2 CC d'Extrait d'orange
Méthode pour les cupcakes: 1. Préchauffer le four à 180° C. 2. Placer les caissettes en papier dans les moules à cupcakes. 3. Dans un bol moyen, mélanger ensemble la farine, la bicarbonate, la poudre à lever, le sel et les épices. 4. Dans un grand bol, battre ensemble les sucres avec l'huile et le beurre. Ajouter les oeufs, puis incorporer les ingrédients secs. Bien mélanger afin d'obtenir une pâte homogène. 5. Incorporer la purée de potimarron. 6. Remplir les caissettes au 2/3. 7. Cuire pendant 20 à 25 minutes ou jusqu'à ce qu'un couteau inséré au centre d'un cupcake en ressorte propre. 8. Mettre les cupackes sur une grille et laisser refroidir. Méthode pour le glaçage: 9. Mettre le cream cheese dans un bol moyen et le ramollir à l'aide d'une spatule. 10. Ajouter le beurre et battre afin d'obtenir un mélange léger. 11. Ajouter le sucre en poudre tamisé et continuer à battre le mélange afin d'obtenir un mélange homogène et léger. 13. Ajouter la vanille ainsi que l'extrait d'orange et bien l'incorporer. 14. Glacer les cupcakes et les décorer selon votre envie.
Remarques: Je vous recommande d'utiliser les courges suivantes:Potimarron (potiron doux d'Hokkaido/courge de Chine) ou la courge Butternut (bien moins goûteuse que le potimarron). Pour obtenir de la purée fraîche, prenez votre potimarron, coupez-le en deux, enlevez les graines et pelez-le, coupez-le en cubes grossiers et faites-les cuire à la vapeur. Une fois cuits, écrasez-les (ou passez-les au mixer) afin d'obtenir une purée fine et épaisse (pas trop liquide). Idées de présentation: Servir ces cupcakes à l'heure du thé avec une bonne boisson chaude (thé, café, caffè latte, lait chaud, etc...).
Although, you might not have guessed, I am an immense cheesecake lover. This inimitably creamy, fluffy and slightly acidic dessert never fails to give me the most intense gustatory pleasure...
I appreciate all kinds of cheesecakes (European, American, with cream cheese, with quark, with ricotta, etc..), but I must say that the American version is my most favorite as, flavor- and texture-wise, it can't be beaten. Nothing compares to a big, thick, oppulent slice of New York Cheesecake made with cream cheese (Philadelphia type). If you've never eaten that speciality, then you don't know what paradize tastes like!
The very first time I encountered Bon Appétit's "Upside-Down Honey Cheesecakes" was when my good friend Jessica from the blog "In Search Of Dessert" (who lived in my village, but has moved back to the US - Austin, Texas), introduced me to these delightfully luscious flan-like (creme brulee-like) and crustless cheesecakes on the occasion of one of our get-togethers. It was love at first bite!
With their rich, yet delicate caramelly, flowery, lemony and tangy aromas as well as their lusciously silky, smooth texture and moist, gooey honey topping, these individual melt-in-your-mouthmini upside-down cheesecakes are fantastic and soooooooo addictive. Give yourself a chance to savor them as slowly as you can and resist the compulsion to gobble them fast. Like any good wine, they deserves to be enjoyed with temperateness.. ~ Upside-Down Honey Cheesecakes ~ Recipe fom "Bon Appétit", April 2007 and adpated by Rosa @ Rosa's Yummy Yums 2009.
Enough for 8x 3/4 cup ramekins or custard cups or 8 people.
Ingredients for the "Honey Caramel": 1/2 Cup (105g) Castor sugar 1/4 Cup Runny honey (fragrant) 1/4 Stick (30g) Unsalted butter 1/4 Cup (60g/ml) Water Ingredients for the "Mini Cheesecakes": 12 ounces (360g) Cream cheese, at room temperature 1/2 Cup (105g) Castor sugar 1/2 Cup (120g/ml) Sour cream 1 Tsp Fresh lemon juice 1/2 Tsp Lemon extract 1 Tsp Pure vanilla extract or paste 2 Large eggs (~63g), at room temperature
Method for the "Honey Caramel": 1. Place the sugar, honey, and butter in heavy medium saucepan. 2. Stir over medium heat until butter melts and mixture is blended. 3. Increase heat to medium-high and bring to boil (without stirring). 4. Lower the temperature and let simmer until mixture darkens slightly (medium brown) and thick, about 5 minutes. 5. Remove from heat and add the water (mixture will bubble vigorously). 6. Whisk to blend and let cool a little (5 minutes). 7. Divide equally (~3Tbs per greased ramekin). 8. Place in the fridge to cool (completely). Method for the "Mini Cheesecakes": 9. Preheat oven to 180°C (300°F). 10. Using on/off turns, blend cream cheese and sugar in processor (or with a handmixer), scraping bowl occasionally. 11. Add the sour cream, lemon juice, vanilla and lemon extract. 12. When smooth, add eggs one at a time, processing just to blend between additions. 13. Divide the mixture among ramekins. 14. Place ramekins in a roasting pan and add enough hot water to come halfway up the sides of the ramekins. 15. Bake the mini cheesecakes until set, about 30-32 minutes. 16. Remove from the roasting pan, let cool at room temperature and chill at least an hour in the fridge before inverting. 17. Run the blade of a thin knife around sides of ramekins. 18. Invert onto plates, scooping any remaining topping from ramekins over the cheesecakes.
Remarks: Can be made 3 days ahead. Cover and keep chilled. This dessert should not to be eaten straight away as it needs to cool and then be refrigerated for several hours, preferably overnight, so that the flavors have time to blend and the texture becomes nice and firm. To make sure that the cheesecakes don't stay stuck to the ramekins when inverting, leave the pots in warm water for about 1 minute.
Serving suggestions: Garnish with fruits, praline powder or coarsely chopped roasted nuts.

~ Mini Cheesecakes Renversés ~ Recette tirée du magazine "Bon Appétit" et adaptée par Rosa @ Rosa's Yummy Yums 2009.
Pour 8 petits ramequins ou 8 personnes.
Ingrédients pour le "Caramel Au Miel": 1/2 Tasse (105g) de Sucre cristallisé 1/4 de Tasse de Miel liquide (parfumé) 30g de beurre non-salé 1/4 de Tasse (60g/ml) d'Eau Ingrédients pour les "Mini Cheesecakes": 360g de Cream cheese (type Philadelphia), à température ambiante 1/2 Tasse (105g) de Sucre cristallisé 1/2 Tasse (120g/ml) de Crème sûre/aigre 1 CC de Jus de citron 1/2 CC d'Extrait de citron 1 CC d'extrait de vanilla pur ou de pâte de vanille pure 2 Gros oeufs Large eggs (~63g), à température ambiante
Méthode pour le "Caramel Au Miel": 1. Mettre le sucre, le miel et le beurre dans un casserole à fond épais. 2. Mélanger tout en chauffant à feu doux jusqu'à ce que le beurre ait fondu et que le tout soit homogène. 3. Monter la température et porter à ébullition (sans mélanger). 4. Baisser la température et laisser mijoter le caramel à feu moyen, pendant 5 minutes, jusqu'à ce qu'il devienne plus foncé (brun) et épais. 5. Retirer du feu et ajouter l'eau d'un seul coup (le caramel va réagir violamment). 6. Bien mélanger le caramel à l'aide d'un fouet et laisser refroidir pendant 5 minutes. 7. Répartir le caramel entre les ramequins beurrés (~3 CS par ramequin). 8. Mettre les ramequins au frigo afin que le caramel refroidisse.
Méthode pour les "Mini Cheesecakes": 9. Préchauffer le four à 180°C (300°F). 10. A l'aide d'un mixer (ou d'un batteur manuel), bien battre (en pulsant) ensemble le cream cheese et le sucre, tout en nettoyant regulièrement les bords du bol. 11. Ajouter la crème sûre/aigre, le jus de citron, la vanille et l'extrait de citron. 12. Un fois le mélange homogène, ajouter un oeuf à la fois, tout en mixant après chaque ajout. 13. Bien répartir le mélange entre les ramequins. 14. Les mettre dans une plaque à gratin et ajouter assez d'eau chaude (dans le plat à gratin) afin que celle-ci atteigne le milieu des remaquings (bain-marie). 15. Cuire les cheesecakes, pendant environ 30-32 minutes. 16. Retirer les ramequins de la plaque à gratin et laissez-les refroidir à température ambiante, puis mettez-les au frigo au moins une heure avant de les inverser. 17. A l'aide d'un couteau, libérer les bords des cheesecakes. 18. Inversez-les sur des assiettes (tout en récupérant le caramel à l'aide d'une maryse).
Remarques: Ces cheesecakes peuvent être faits 3 jours à l'avance et gardés au frigo. Ce dessert ne devrait pas être mangé tout de suite car il a besoin de refroidir et d'être réfrigéré au moins quelques heures ou toute une nuit car de cette manière les cheesecakes développeront leur saveur et leur texture sera meilleure (plus ferme et crémeuse). Afin de bien les démouler plus facilement, trempez les ramequins pendant 1 minute dans l'eau chaude avant de les inverser. Idées de présentation: Décorez ces mini cheesecakes avec des fruits, de la poudre de pralin ou des noix torréfiée et concassées.
Last september, I blogged about the two different batches of cupcakes (around 50 all in all) that I made for my friend Corinne's daughter's birthday party. Well, after having posted the recipe for those exquisite "Vanilla And Lemon Cupcakes" a few months ago, today, I am posting about that second batch...
When I was doing some research on the net in order to find ideas for Samira's special event, it was clear for me that the cupcakes I was going to bake had to be rich, scrumptious, teen compatible, unforgettable and had to come in two variations and two different colors.
As most people, grownups and youngsters alike, love Snickers Bars, I thought that it would be an awesome idea to combine at least two of the ingredients (in that case, peanuts and chocolate) contained in that treat in order to create cupcakes which would be as regressive as possible!
Saying that these "Dark Chocolate & Peanut Butter Cupcakes" are terrific is nearly an euphemism as they are just simply drop-dead gorgeous! Magolia Bakery's recipe gives very moist, terribly fluffy, pleasantly smooth and feather-like cupcakes, thanks to the use of buttermilk and baking soda (no baking powder here). Taste-wise, they are just orgasmically ambrosial. The deep, intense and vibrant chocolate aroma blends tremendously well with the addictively nutty, creamy, ample as well as slightly salty flavor of Alisa Huntsman's incredibly luscious as well as silky "Peanut Butter & Cream Cheese Frosting" (one of the best frostings I have ever tasted/made so far!).
Those divine little "babies" will drive your tastebuds crazy and you'll come back asking for more, licking your fingers greedily after each bite!
~ Dark Chocolate & Peanut Butter Cupcakes ~ "Dark Chocolate Cupcakes" recipe by Magnolia Bakery "The Magnolia Cookbook", "Peanut Butter Frosting" by Alisa Huntsman "Sky High: Irresistable Triple-Layer Cakes" & adapted by Rosa @ Rosa's Yummy Yums. Makes about 24 cupcakes.
Ingredients for the "Dark Chocolate Cupcakes": 2 Cups (255g) All-purpose flour 1 Tsp Baking soda 1 Cup (240g/2 sticks) Unsalted butter, softened 1 Cup (210g) Granulated sugar 1 Cup (240g) Firmly-packed light brown sugar 4 Large eggs (~63g), room temp 6 Oz (180g) Unsweetened chocolate, melted (see remarks) 1 Cup (240ml) Buttermilk (see remarks)1 Tsp Pure vanilla extract Ingredients for the "Peanut Butter Frosting": 6.6 Oz (200g) Cream cheese, at room temperature 2.6 Oz (80g) Unsalted butter, at room temperature 3 1/3 Cups (400g) Confectioners’ sugar, sifted 1/2 Cup (128g) Smooth peanut butter, preferably a commercial brand (because oil doesn’t separate out)
Method for the "Dark Chocolate Cupcakes": 1. Preheat oven to 180° C (350° F). 2. Line the muffin tins with paper liners. 3. In a small bowl, sift together flour and baking soda. Set aside. 4. In a large bowl, (by hand or with the help of a handmixer/mixer) cream the butter until smooth. 4. Add the sugars and beat until fluffy, about 3 minutes. 5. Add the eggs, one at a time, beating well after each addition. 6. Add the melted chocolate and the vanilla, mixing until well incorporated. 7. Add dry ingredients in 3 parts, alternating with the buttermilk. With each addition, beat until ingredients are incorporated (but do not overbeat), until they are well blended and the batter is smooth. 8. Carefully spoon the batter into the cupcake liners, filling them about 3/4 full. 9. Bake for 20-25 minutes until the tester toothpick inserted in the center comes out clean. 10. Cool in the tins for 15 minutes before removing them from the tins and cool completely on cooling racks before frosting.
Method for the "Peanut Butter Frosting": 11. In a large bowl with an electric (hand)mixer, beat the cream cheese and butter until light and fluffy. 12. Gradually add the confectioners’ sugar 1 cup at a time, mixing thoroughly after each addition and scraping down the sides of the bowl often. Continue to beat on medium speed until light and fluffy, 3 to 4 minutes. 13. Add the peanut butter and beat until thoroughly blended. 14. Frost the cupcakes and decorate them as you wish.
Remarks: I had no unsweetened chocolate at home, so I used some Lindt 70% chocolate. If you have no buttermilk and you are looking for substituations, follow this link. You can keep your "Peanut Butter Frosting" in the fridge for up to a week or even freeze it for up to 2 months.
Serving suggestions: Enjoy without moderation, at any time of the day and on any occasion, with a big glass of ice cold milk.

~ Cupcakes Au Chocolat Noir Et Leur Glaçage Au Peanut Butter ~ Recette pour les cupcakes par Magnolia Bakery "The Magnolia Cookbook", recette pour le glaçage par Alisa Huntsman "Sky High: Irresistable Triple-Layer Cakes" toutes les deux adaptées par Rosa @ Rosa's Yummy Yums. Donne environ 24 cupcakes. Ingrédients pour les "Cupcakes au Chocolat Noir": 2 Tasses (255g) de Farine fleur/blanche 1 CC de Bicarbonate de soude 1/2 CC de sel 1 Tasse (240g) de Beurre non-salé, ramolli 1 Tasse (210g) de Sucre cristallisé 1 Tasse (240g) de Sucre brun clair 4 Larges oeufs (~ 63g), à température ambiante 180g de Chocolat non-sucré, fondu au bain-marie (voir remarques) 1 Tasse (240ml) de Babeurre (voir remarques)1 CC d'Extrait de vanille pure Ingrédients pour le "Glaçage Au Peanut Butter": 200g de Cream cheese, à température ambiante 80g de Beurre non-salé, à température ambiante 400g de Sucre en poudre, tamisé 128g de Peanut butter (sans morceau) Méthode pour les "Cupcakes au Chocolat Noir": 1. Préchauffer le four à 180° C (350° F). 2. Placer des petits moules en papier sulfurisé dans les compartiments de la plaque à muffins. 3. Dans un petit bol, mélanger ensemble la farine, la bicarbonate de soude et le sel. Mettre de côté. 4. Dans un grand bol, (à la main ou à l'aide d'un mixer) battre le beurre en pommade. 4. Ajouter les deux sucres et battre (~3 minutes) jusqu'à ce le mélange devienne léger. 5. Ajouter les oeufs, un à la fois, tout en mélangeant bien après chaque ajout. 6. Ajouter le chocolat fondu, puis la vanille et mélanger jusqu'à ce qu'ils soient bien incorporés. 7. Ajouter les ingrédients secs en trois fois, tout en alternant avec le babeurre. Après chaque addition, bien mélanger afin que les ingrédients soient totalement incorporés (ne pas trop mélanger tout de même) et que la pâte soit homogène/lisse. 8. Remplir délicatement les moules avec la pâte, en remplissant jusqu'au 3/4. 9. Cuire pendant 20 à 25 minutes, jusqu'à ce que la lame d'un couteau en ressorte sèche/propre. 10. Laisser refroidir dans la plaque pendant 15 minutes avant de sortir les cupcakes de leur compartiment et de les faire refroidir complètement sur une grille. Méthode pour le "Glaçage Au Peanut Butter": 11. Dans un grand bol, à l'aide d'un mixer, battre le cream cheese et le beurre ensemble, jusqu'à ce que le mélange soit léger et onctueux. 12. Ajouter graduellement le sucre en poudre (1 tasse à la fois), en mélanger bien après chaque addition et en nettoyant les bords du bol régulièrement. Continuer à battre à vitesse moyenne pendant 3 à 4 minutes, jusqu'à ce que le mélange soit léger et onctueux. 13. Ajouter le peanut butter et battre jusqu'à ce qu'il soit entièrement incorporé. 14. Couvrir le dessus les cupcakes avec le glaçage et décorer comme désiré.
Remarques: Comme je n'avais pas de chocolat non-sucré, j'ai utilisé du chocolat Lindt 70%. Si vous n'avez pas de babeurre, alors suivez ce lien pour plus d'infos concernant les possibles substitutions. Vous pouvez garder votre "Glaçage Au Peanut Butter" au frigo pendant 1 semaine et même le garder au congélateur (2 mois).
